  AUBERGINE ROULADES
 

Ingredients
Vizzino aubergines, Little balls of mozzarella cheese, Pink pepper, Mint,
Preparation time: about 10 minutes

Preparation
Take Vizzino aubergines, drain extra olive oil and cut the slices in halves. Wrap them around the balls of mozzarella cheese; use toothpicks to keep them well rolled. Garnish with mint and sprinkle with pink pepper.
